Are you wondering how tequila came to be a renewed spirit in the liquor world? We hope you are because we’re going to share with you some of the most interesting facts and secrets about the best tequila.
The origin story of the first tequila is fascinating. It dates back to 250-300 A.D. and the Aztec Indians. They were the first that fermented the juice of the agave to produce the ceremonial wine called “pulque”. The agave plant was used as a personification, or as a deity of the goddess of fertility, Mayahuel.
Once the conquistadors, with Cortes at the helm, conquered Mexico, tequila was born. The Spanish brought cooper still heads and distillation to Mexico, and within a decade of experimenting with the native agave plant, they made the spirit we know today as tequila. Also, there’s a whole town called Tequila in Mexico’s western state of Jalisco, which is famous for the production of this spirit.
Tequila is to Mexico, what rum is to Cuba, and in almost every distillery, some long-standing traditions and methods dictate the way the spirit is made. For an agave plant to reach full maturity and thus to be ripe for usage, it has to grow for almost five years. There are 166 species of agave, and 125 of them are found in Mexico, but legally, only one is used for producing tequila, the Agave Tequilana Weber Azul.
Once the agave is harvested and cooked, which is not an easy task, the fermentation process begins. Yeast is used to converting the sugar in the agave juice into alcohol. The type/s of yeast and other botanicals and ingredients used in the fermentation process are the ones that determine the taste of the tequila. This process lasts from 24 to 96 hours.
Once that process is finished, the distillation can begin. In order to make tequila, the “mosto” has to be distilled twice a day. The best tequilas, however, have an additional process after this phase, which is called maturation. Even though maturation is optional, it’s best to let the spirit mellow down and develop other tastes and notes for at least two months.
