St. George Spirits distillery is located on the picturesque island of Alameda, California.  The 65,000 square foot facility, housed inside a World War II airplane hanger, with stunning views of San Francisco Bay, is home to what can only be described as the adult version of Willy Wonka's Chocolate Factory. Vast glistening copper stills and an experimental laboratory where the team are consistently experimenting with new and adventurous distillations to get us spirit nerds excited.
 
Founded in 1982, St George are one of the original craft producers, their products range from fruit eau de vies, to botanical driven gins, crazy American whiskeys and bitter Aperitivo's. Absinthe Verte was the first legally released absinthe in the United States when the near century old ban was overturned in 2007. Head distiller Lance Winters had been playing with different recipes for the previous 11 years by infusing brandy with the "Unholy Trinity" of wormwood, fennel and star anise. A secondary distillate (which gives its unique colour due to the breakdown of chlorophyll) then incorporates mint, tarragon, opal basil, lemon balm, hyssop, and stinging nettles! The result is a delightful herbaceous aroma, with notes of black liquorice, citrus and sarsaparilla at a spirit forward 60% abv!
 
Our favourite way to drink it is over ice, with a small dash of water to extract the beautiful milky louche hue or in a thirst-quenching Absinthe Frappé variation with a touch of Tempus Fugit Spirits creme de menthe, Crawley's simple syrup and East Imperial Soda water. We're also partial to a little Absinthe Verte rinse in some of our favourite First Golden Age cocktails like a Sazerac!
